New Year's Eggs Recipe

I don't really have a name for this quick breakfast, but I made them close to New Year's so that's the logic.

Please let me know if you give it a try!

Ingredients:

- 2 large, grade A brown eggs
- a few slices of Kumato brown tomato
- chunks of baked store-bought cheese bread
- balsamic vinegar
- Creole seasoning (I used Tony Chachere's Original)
- oregano, salt, & pepper
- butter

Instructions:

1) Heat a tablespoon of butter in a small frying pan.

2) Cook eggs sunny side up, sprinkling Creole seasoning, oregano, salt & pepper to taste over medium-high heat.

3) While eggs are cooking, lightly toast cheese bread chunks in a toaster oven.

4) Spray Kumato slices with balsamic before placing on serving plate.

5) Lay seasoned eggs and toasted bread chunks out on serving plate. Enjoy!

Stuffed Portobello Mushrooms Recipe

My mom's boyfriend shared this recipe with me so I thought I'd post it in case anyone wants to experiment with it for the holidays. Drop me a comment if you give it a shot!

Ingredients:

- 4 portobello mushrooms
- 2 or 3-leaf Balsamic vinegar
- Extra virgin olive oil
- Soy sauce
- Worcestershire sauce
- 8 tbl. spoons (1 stick) of butter
- 1 can of lump crab meat
- Bread crumbs
- Mozzarella & Parmesan cheeses

Directions:

1) Stem the mushrooms out with a paring knife, just removing enough so it seems cored. Wipe the back of the caps off with a damp paper towel to remove any produce dirt.

2) Place each cap inside of an airtight, sealable bag and then pour in equal parts of olive oil, Balsamic, soy, and Worcestershire. You can offset the saltiness of the soy and Worcestershire by adding slightly more Balsamic to taste.

3) Marinate for at least 6 hours (this last batch I let sit for 24 hours). The mushrooms will soak up the marinade like a sponge.

4) Preheat oven to 350*F.

5) Place mushrooms inside a glass cooking dish, like a casserole of sorts. Place on center rack of the oven and cook for 20-25 minutes.

6) While mushrooms cook, in a small saucepan slowly melt the stick of butter (don't make the butter too hot or it will separate). Add the lump crabmeat and stir in bread crumbs to thicken consistency as seen fit.

7) Remove mushrooms from the oven and scoop crab meat mixture evenly onto each cap. Then throw some shredded mozzarella & grated Parmesan cheese on as a topping.

8) Place mushrooms back in the oven and turn oven to "Broil". Melt cheese until slightly browned. 

9) Let mushrooms sit for 5-10 minutes and then serve 'em up!
